  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a medium saucepan, combine the water, butter, and salt. Bring to a boil over medium heat.
  3. Once the mixture is boiling, add the flour all at once. Stir vigorously until the mixture pulls away from the sides of the pan and forms a ball.
  4. Remove from heat and let cool for a few minutes. Then, add the eggs one at a time, stirring well after each addition.
  5. Stir in the grated cheese.
  6. Drop by tablespoonfuls onto the prepared baking sheet.
  7. Bake for 20-25 minutes, or until puffed and golden.
  8. Serve warm.
