  1. Spread the mayonnaise and mustard evenly on one side of each slice of bread.
  2. Place a slice of gouda cheese on two of the slices of bread.
  3. Top the cheese with lettuce and tomato slices. Season with salt and pepper.
  4. Place the remaining slices of bread on top, with the spread side down.
  5. Heat a pan over medium heat. Add the sandwiches and cook until the bread is toasted and the cheese is melted, about 2-3 minutes per side.
  6. Remove from the heat, cut in half, and serve.
