Gondi
Gondi is a traditional Persian meatball soup made with ground chicken, chickpea flour, and aromatic spices.
Ingredients - Serves 6
- Fresh cilantro - 1/4 cup, chopped
- Lemon juice - 2 tablespoons
- Chicken broth - 6 cups
- Salt and pepper - To taste
- Cardamom - 1/2 teaspoon
- Cinnamon - 1/2 teaspoon
- Cumin - 1 teaspoon
- Turmeric - 1 teaspoon
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Chickpea flour - 1 cup
- Ground chicken - 1 pound
Let's Get Started
- In a large bowl, combine the ground chicken, chickpea flour, onion, garlic, turmeric, cumin, cinnamon, cardamom, salt, and pepper. Mix well to combine.
- Shape the mixture into small meatballs, about 1 inch in diameter.
- In a large pot, bring the chicken broth to a boil.
- Carefully drop the meatballs into the boiling broth and reduce the heat to a simmer.
- Cook the meatballs for about 30 minutes, or until cooked through.
- Stir in the lemon juice and fresh cilantro.
- Serve hot and enjoy!
