Goi Tom
Goi Tom is a refreshing Vietnamese shrimp salad made with fresh vegetables, herbs, and succulent shrimp.
Ingredients - Serves 4
- Thai chili - 1, thinly sliced
- Garlic - 2 cloves, minced
- Sugar - 1 tablespoon
- Lime juice - 2 tablespoons
- Fish sauce - 3 tablespoons
- Roasted peanuts - 1/4 cup, chopped
- Fresh cilantro leaves - 1/2 cup, chopped
- Fresh mint leaves - 1/2 cup, chopped
- Red onion - 1/2, thinly sliced
- Red bell pepper - 1, thinly sliced
- Carrot - 1, julienned
- Cucumber - 1, thinly sliced
- Shrimp - 1 pound, peeled and deveined
Let's Get Started
- Bring a pot of water to a boil. Add the shrimp and cook for 2-3 minutes, until they turn pink and opaque. Drain and set aside.
- In a large bowl, combine the cucumber, carrot, red bell pepper, red onion, mint leaves, cilantro leaves, and chopped peanuts.
- In a small bowl, whisk together the fish sauce, lime juice, sugar, minced garlic, and sliced Thai chili.
- Add the cooked shrimp to the vegetable mixture and pour the dressing over the top. Toss well to combine.
- Let the salad marinate for 10-15 minutes to allow the flavors to meld together.
- Serve the Goi Tom salad chilled and enjoy!
