Glutinous Rice Balls in Fermented Rice Soup
A traditional Chinese dessert, Jiuniang Tangyuan is a sweet soup made with fermented glutinous rice and filled glutinous rice balls. It's a popular treat during the Lunar New Year.
Ingredients - Serves 4
- Osmanthus flowers - 1 tablespoon
- Rock sugar - 1/2 cup
- Fermented sweet rice (jiuniang) - 2 cups
- Red bean paste - 1/2 cup
- Water - 1 cup
- Glutinous rice flour - 2 cups
Let's Get Started
- In a large bowl, mix the glutinous rice flour with water until a dough forms. Knead the dough until it is smooth.
- Divide the dough into small pieces and roll each piece into a ball. Flatten each ball and add a small amount of red bean paste to the center. Fold the dough over the filling and roll it back into a ball.
- Bring a large pot of water to a boil. Add the rice balls and cook until they float to the surface.
- In a separate pot, heat the fermented sweet rice, rock sugar, and osmanthus flowers over medium heat until the sugar is dissolved.
- Add the cooked rice balls to the sweet soup and serve warm.
