Tofu and Broccoli Pad Thai

Ingredients - Serves 4

Let's Get Started

  1. Press the tofu to remove excess water and then cut into cubes.
  2. Cook the rice noodles according to the package instructions, then drain and set aside.
  3. In a small bowl, mix together the soy sauce, lime juice, and brown sugar.
  4. Heat the peanut oil in a large pan over medium heat. Add the tofu and cook until golden brown on all sides.
  5. Add the broccoli to the pan and cook until tender.
  6. Add the garlic and green onions and cook for another minute.
  7. Add the cooked noodles and the soy sauce mixture to the pan and toss to combine.
  8. Serve the Pad Thai garnished with the crushed peanuts.
