Gluten Free Paella with Shrimp and Chorizo

- Frozen peas - 1 cup
- Gluten-free paella rice - 2 cups
- Smoked paprika - 1 teaspoon
- Saffron threads - 1/4 teaspoon
- Gluten-free chicken broth - 3 cups
- Garlic - 3 cloves, minced
- Bell pepper - 1, diced
- Onion - 1, diced
- Shrimp - 1 pound, peeled and deveined
- Chorizo - 8 ounces, sliced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large paella pan or skillet over medium heat.
- Add the sliced chorizo and cook until browned, about 5 minutes. Remove the chorizo from the pan and set aside.
- In the same pan, add the shrimp and cook until pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the pan and set aside.

- Return the cooked chorizo to the pan and add the frozen peas. Stir to combine.
- Cover the pan and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let the paella rest for 5 minutes.
