Gluten Free Chicken and Rice Casserole
A delicious and comforting gluten-free casserole made with chicken, rice, and flavorful seasonings.
Ingredients - Serves 6
- Dairy-free cheese - 1 cup, shredded
- Salt and pepper - To taste
- Dried thyme - 1 teaspoon
- Frozen mixed vegetables - 1 cup
- Garlic - 2 cloves, minced
- Onion - 1, diced
- Olive oil - 2 tablespoons
- Gluten-free all-purpose flour - 1/4 cup
- Gluten-free chicken broth - 1 cup
- Gluten-free rice - 2 cups, cooked
- Chicken breasts - 2, boneless and skinless, diced
Let's Get Started
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat.
- Add the diced chicken and cook until browned. Remove from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic. Cook until the onion is translucent.
- Add the gluten-free all-purpose flour to the skillet and stir to coat the onions and garlic.
- Slowly pour in the gluten-free chicken broth while stirring constantly to avoid lumps.
- Add the dried thyme, salt, and pepper. Cook until the sauce thickens.
- In a large baking dish, combine the cooked rice, cooked chicken, frozen mixed vegetables, and the prepared sauce. Mix well to combine.
- Sprinkle the dairy-free cheese evenly over the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
