Gluten Free Cauliflower Fried Rice
This gluten-free cauliflower fried rice is a healthy and delicious alternative to traditional fried rice. It's packed with veggies and full of flavor!
Ingredients - Serves 4
- Salt and pepper - To taste
- Green onions - 2, chopped
- Sesame oil - 1 tablespoon
- Gluten-free soy sauce - 2 tablespoons
- Eggs - 2, beaten
- Garlic - 3 cloves, minced
- Onion - 1, diced
- Bell peppers - 2, diced
- Peas - 1 cup
- Carrots - 2, diced
- Cauliflower - 1 head, grated
Let's Get Started
- Heat sesame oil in a large skillet or wok over medium heat.
- Add diced onion and minced garlic, and cook until onion is translucent.
- Add diced carrots, bell peppers, and peas. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
- Push the vegetables to one side of the skillet and add beaten eggs to the other side. Scramble the eggs until cooked through.
- Add grated cauliflower to the skillet and stir-fry for 2-3 minutes until cauliflower is tender.
- Add gluten-free soy sauce, salt, and pepper. Stir to combine and cook for an additional 2 minutes.
- Remove from heat and garnish with chopped green onions.
- Serve hot and enjoy!
