Gluten Free Cauliflower Fried Rice

Ingredients - Serves 4

Let's Get Started

  1. Heat sesame oil in a large skillet or wok over medium heat.
  2. Add diced onion and minced garlic, and cook until onion is translucent.
  3. Add diced carrots, bell peppers, and peas. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
  4. Push the vegetables to one side of the skillet and add beaten eggs to the other side. Scramble the eggs until cooked through.
  5. Add grated cauliflower to the skillet and stir-fry for 2-3 minutes until cauliflower is tender.
  6. Add gluten-free soy sauce, salt, and pepper. Stir to combine and cook for an additional 2 minutes.
  7. Remove from heat and garnish with chopped green onions.
  8. Serve hot and enjoy!
