Gluten Free Broccoli Cheddar Soup
This creamy and delicious broccoli cheddar soup is gluten-free and packed with flavor.
Ingredients - Serves 6
- Salt and pepper - To taste
- Cheddar cheese (or dairy-free cheese) - 2 cups, shredded
- Milk (or dairy-free milk) - 2 cups
- Vegetable broth - 4 cups
- Gluten-free all-purpose flour - 1/4 cup
- Broccoli - 4 cups, chopped
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
- Add the chopped broccoli and cook for another 5 minutes.
- Sprinkle the gluten-free all-purpose flour over the vegetables and stir well to coat.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes, or until the broccoli is tender.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Return the soup to the pot and stir in the milk and shredded cheddar cheese. Cook over low heat until the cheese is melted and the soup is heated through.
- Season with salt and pepper to taste.
