Ginger Tofu Stir Fry
This flavorful ginger tofu stir fry is a delicious and healthy vegan dish packed with protein and vegetables.
Ingredients - Serves 2
- Sesame seeds - 1 tablespoon
- Green onions - 2, chopped
- Vegetable broth - 1/2 cup
- Cornstarch - 1 tablespoon
- Snow peas - 1/2 cup
- Bell pepper - 1, sliced
- Carrot - 1, sliced
- Broccoli - 1 cup, florets
- Garlic - 2 cloves, minced
- Ginger - 1 tablespoon, minced
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Firm tofu - 1 block, cubed
Let's Get Started
- Press the tofu to remove excess water, then cut it into cubes.
- In a small bowl, mix together soy sauce, sesame oil, minced ginger, and minced garlic.
- Heat a large skillet or wok over medium-high heat and add the tofu cubes. Cook until golden brown on all sides.
- Remove the tofu from the skillet and set aside.
- In the same skillet, add the broccoli, carrot, bell pepper, and snow peas. Stir fry for 3-4 minutes, until the vegetables are tender-crisp.
- In a separate small bowl, whisk together cornstarch and vegetable broth until smooth.
- Pour the cornstarch mixture into the skillet with the vegetables. Cook for 1-2 minutes, until the sauce thickens.
- Add the cooked tofu back to the skillet and toss to coat it with the sauce and vegetables.
- Garnish with chopped green onions and sesame seeds.
- Serve the ginger tofu stir fry hot with steamed rice or noodles.
