Ginger Tofu Stir Fry

  1. Press the tofu to remove excess water, then cut it into cubes.
  2. In a small bowl, mix together soy sauce, sesame oil, minced ginger, and minced garlic.
  3. Heat a large skillet or wok over medium-high heat and add the tofu cubes. Cook until golden brown on all sides.
  4. Remove the tofu from the skillet and set aside.
  5. In the same skillet, add the broccoli, carrot, bell pepper, and snow peas. Stir fry for 3-4 minutes, until the vegetables are tender-crisp.
  6. In a separate small bowl, whisk together cornstarch and vegetable broth until smooth.
  7. Pour the cornstarch mixture into the skillet with the vegetables. Cook for 1-2 minutes, until the sauce thickens.
  8. Add the cooked tofu back to the skillet and toss to coat it with the sauce and vegetables.
  9. Garnish with chopped green onions and sesame seeds.
  10. Serve the ginger tofu stir fry hot with steamed rice or noodles.
