Ghanaian Peanut Butter Chicken Curry

Ingredients - Serves 4
- Fresh cilantro - For garnish
- Salt and pepper - To taste
- Tomato paste - 2 tablespoons
- Chicken broth - 1 cup
- Coconut milk - 1 can (13.5 oz)
- Peanut butter - 1/2 cup
- Cayenne pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Chicken thighs - 1.5 lbs, boneless and skinless

- In a large pot, heat some oil over medium heat. Add the chopped onion and cook until softened.
