Let's Get Started

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and almond extract.
  4. In a separate bowl, combine the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture and mix until a dough forms.
  6. Divide the dough into 12 equal pieces and flatten each piece into a disc.
  7. Place a spoonful of almond paste in the center of each disc and fold the dough over to enclose the paste.
  8. Place the cookies on the prepared baking sheet and press a whole almond into the top of each one.
  9. Bake for 20 minutes, or until the cookies are golden brown.
  10. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
