Ingredients - Serves 4

Let's Get Started

  1. Melt the butter in a saucepan over medium heat. Add the flour and stir until a roux forms.
  2. Gradually add the milk, stirring constantly, until the mixture thickens. Cook for a few more minutes until it has the consistency of a thick béchamel sauce.
  3. Add the chopped shrimp to the sauce and season with salt and pepper. Stir well to combine.
  4. Spread the mixture on a flat dish and let it cool completely. Once cooled, shape the mixture into small logs.
  5. Dip each log into the beaten eggs, then roll in the breadcrumbs until fully coated.
  6. Heat the vegetable oil in a deep fryer or large, deep saucepan to 180°C (350°F).
  7. Fry the croquettes in batches for 2-3 minutes, or until golden brown. Drain on paper towels.
  8. Serve the shrimp croquettes hot with a side of tartare sauce or a squeeze of lemon.
