  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the olive oil, minced garlic, Italian seasoning, and salt and pepper.
  3. Add the cubed tofu to the bowl and toss until well coated.
  4. Spread the tofu out on the prepared baking sheet in a single layer.
  5. Bake for 20-25 minutes, or until the tofu is golden and crispy.
  6. Remove the tofu from the oven and sprinkle with the grated Parmesan cheese.
  7. Return the tofu to the oven and bake for another 5 minutes, or until the cheese is melted and slightly crispy.
  8. Serve the tofu bites hot, with a side of marinara sauce for dipping if desired.
