Garlic Herb Butter Steak with Grilled Veggies and Parmesan Roasted Potatoes

Ingredients - Serves 4
- Salt and pepper - To taste
- Parmesan cheese - 1 cup, grated
- Potatoes - 4 large, cubed
- Olive oil - 2 tablespoons
- Mixed vegetables - 4 cups
- Butter - 1/2 cup
- Mixed herbs - 2 tablespoons
- Garlic - 4 cloves, minced
- Ribeye steak - 4 pieces
Let's Get Started
- Preheat the oven to 400°F and heat the grill to medium-high.
- In a bowl, mix together the minced garlic, mixed herbs, and butter to form the garlic herb butter. Set aside.
- Season the steak with salt, pepper, and half of the garlic herb butter. Place on the grill and cook to your desired level of doneness.
- Toss the mixed vegetables in olive oil, salt, and pepper. Place on the grill and cook until tender and slightly charred.
- Toss the cubed potatoes in olive oil, salt, pepper, and half of the grated parmesan. Place on a baking sheet and roast in the oven for 20-25 minutes, or until golden and crispy.
- Once the potatoes are done, sprinkle the remaining parmesan on top and return to the oven for a few minutes until the cheese is melted and bubbly.
- Serve the steak with the grilled veggies and parmesan roasted potatoes, topping the steak with the remaining garlic herb butter.
