Garlic Herb Butter Steak with Grilled Veggies and Parmesan Roasted Potatoes

Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 400°F and heat the grill to medium-high.
  2. In a bowl, mix together the minced garlic, mixed herbs, and butter to form the garlic herb butter. Set aside.
  3. Season the steak with salt, pepper, and half of the garlic herb butter. Place on the grill and cook to your desired level of doneness.
  4. Toss the mixed vegetables in olive oil, salt, and pepper. Place on the grill and cook until tender and slightly charred.
  5. Toss the cubed potatoes in olive oil, salt, pepper, and half of the grated parmesan. Place on a baking sheet and roast in the oven for 20-25 minutes, or until golden and crispy.
  6. Once the potatoes are done, sprinkle the remaining parmesan on top and return to the oven for a few minutes until the cheese is melted and bubbly.
  7. Serve the steak with the grilled veggies and parmesan roasted potatoes, topping the steak with the remaining garlic herb butter.
