Garlic Butter Shrimp with Zucchini Noodles

  1. In a large pan, melt 2 tablespoons of butter over medium heat.
  2. Add the shrimp and cook until pink, about 2-3 minutes per side. Remove the shrimp from the pan and set aside.
  3. In the same pan, add the remaining butter and garlic. Cook until the garlic is fragrant, about 1 minute.
  4. Add the zucchini noodles to the pan. Cook, stirring occasionally, until the noodles are tender, about 5 minutes.
  5. Return the shrimp to the pan and stir to combine. Add the lemon juice, parsley, salt, and pepper. Cook for another 2 minutes.
  6. Serve the shrimp and zucchini noodles immediately, garnished with extra parsley if desired.
