Garlic Butter Shrimp with Zucchini Noodles
This is a quick, healthy and flavorful dish where shrimp is sautéed in garlic butter and served with zucchini noodles.
Ingredients - Serves 4
- Salt and pepper - To taste
- Parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
- Zucchini - 4, spiralized into noodles
- Butter - 4 tablespoons
- Garlic - 4 cloves, minced
- Shrimp - 1 pound, peeled and deveined
Let's Get Started
- In a large pan, melt 2 tablespoons of butter over medium heat.
- Add the shrimp and cook until pink, about 2-3 minutes per side. Remove the shrimp from the pan and set aside.
- In the same pan, add the remaining butter and garlic. Cook until the garlic is fragrant, about 1 minute.
- Add the zucchini noodles to the pan. Cook, stirring occasionally, until the noodles are tender, about 5 minutes.
- Return the shrimp to the pan and stir to combine. Add the lemon juice, parsley, salt, and pepper. Cook for another 2 minutes.
- Serve the shrimp and zucchini noodles immediately, garnished with extra parsley if desired.
