- Lemongrass - 2 stalks, minced
- Garlic - 4 cloves, minced

- Chicken thighs - 4, bone-in and skin-on
Let's Get Started
- In a bowl, combine fish sauce, minced garlic, minced lemongrass, sugar, and black pepper to make the marinade.
- Add the chicken thighs to the marinade and coat them well. Let them marinate for at least 1 hour, or overnight for better flavor.
- Heat vegetable oil in a deep pan or skillet over medium-high heat.
- Remove the chicken thighs from the marinade and coat them with cornstarch, shaking off any excess.
- Carefully place the chicken thighs in the hot oil and fry until golden brown and crispy, about 8-10 minutes per side.
- Transfer the fried chicken thighs to a paper towel-lined plate to drain excess oil.
- Serve the Ga Chien Gion hot with lime wedges and garnish with fresh cilantro.
