Fufú de Plátano
Fufú de Plátano is a traditional dish from the Caribbean made with mashed plantains and served with a savory stew.
Ingredients - Serves 4
- Fresh cilantro - 2 tablespoons, chopped
- Salt and pepper - To taste
- Cooking oil - 2 tablespoons
- Tomato - 1, diced
- Bell pepper - 1, chopped
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Chicken or beef broth - 2 cups
- Green plantains - 4
Let's Get Started
- Peel the plantains and cut them into chunks.
- Place the plantain chunks in a large pot and cover with water. Bring to a boil and cook until the plantains are tender, about 15-20 minutes.
- While the plantains are cooking, heat the cooking oil in a separate pan over medium heat.
- Add the garlic, onion, and bell pepper to the pan and sauté until softened, about 5 minutes.
- Add the diced tomato to the pan and cook for an additional 2 minutes.
- Once the plantains are tender, drain the water and transfer them to a large bowl.
- Mash the plantains with a fork or potato masher until smooth.
- Gradually add the chicken or beef broth to the mashed plantains, stirring until well combined and the desired consistency is reached.
- Season with salt and pepper to taste.
- Serve the fufú de plátano with the sautéed vegetables on top and garnish with fresh cilantro.
