Frijoles Refritos
Frijoles refritos, or refried beans, are a traditional Mexican dish made from pinto beans that are cooked, mashed, and fried.
Ingredients - Serves 6
- Cilantro - 2 tablespoons, chopped (optional)
- Water - 1/4 cup
- Salt - To taste
- Cumin - 1 teaspoon
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Vegetable oil - 2 tablespoons
- Pinto beans - 2 cups, cooked
Let's Get Started
- Heat the vegetable oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic to the skillet and cook until the onion is translucent, about 5 minutes.
- Add the cooked pinto beans to the skillet and mash them with a potato masher or the back of a spoon.
- Stir in the cumin and salt, and continue to cook for another 5 minutes.
- Add the water to the skillet and stir well to combine.
- Reduce the heat to low and simmer the beans for 15-20 minutes, stirring occasionally, until they reach the desired consistency.
- If desired, stir in the chopped cilantro before serving.
- Serve the frijoles refritos as a side dish with your favorite Mexican meals.
