Fried Zucchini Blossoms with Prosciutto and Mozzarella

Ingredients - Serves 4
- Olive oil - For frying
- Salt and pepper - To taste
- Eggs - 2, beaten
- Flour - 1 cup
- Mozzarella - 12 small pieces
- Prosciutto - 12 thin slices
- Zucchini blossoms - 12 fresh
Let's Get Started
- Gently open each zucchini blossom and place a piece of prosciutto and mozzarella inside. Twist the top of the blossom to enclose the filling.
- Season the flour with salt and pepper and place in a shallow dish. Place the beaten eggs in another shallow dish.
- Heat the olive oil in a large frying pan over medium heat.
- Dip each stuffed blossom in the flour, then in the egg, and place in the hot oil.
- Fry the blossoms until golden brown, about 2-3 minutes per side.
- Drain the fried blossoms on paper towels and serve immediately.
