Fricase de Pollo
Fricasé de Pollo is a traditional Cuban chicken stew made with chicken, potatoes, and a flavorful tomato-based sauce.
Ingredients - Serves 6
- Fresh cilantro - 2 tablespoons, chopped
- Vegetable oil - 2 tablespoons
- Salt and pepper - To taste
- Bay leaf - 1
- Oregano - 1 teaspoon
- Cumin - 1 teaspoon
- Capers - 2 tablespoons
- Olives - 1/2 cup, pitted
- Potatoes - 4 medium, peeled and cubed
- Chicken broth - 2 cups
- Tomato sauce - 1 cup
- Bell pepper - 1, chopped
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Chicken - 1 whole chicken, cut into pieces
Let's Get Started
- In a large pot, heat the vegetable oil over medium heat.
- Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the onion, garlic, and bell pepper. Cook until the vegetables are softened.
- Add the tomato sauce, chicken broth, cumin, oregano, bay leaf, salt, and pepper. Stir to combine.
- Return the chicken to the pot and add the potatoes, olives, and capers. Bring to a boil, then reduce the heat to low.
- Cover the pot and simmer for 45 minutes, or until the chicken is cooked through and the potatoes are tender.
- Remove the bay leaf and garnish with fresh cilantro before serving.
- Serve the Fricasé de Pollo hot with rice or crusty bread.
