Veggie and Tofu Summer Rolls
These refreshing summer rolls are filled with fresh vegetables, tofu, and herbs, and served with a delicious peanut dipping sauce.
Ingredients - Serves 4
- Peanut dipping sauce - For serving
- Lettuce leaves - 8 small leaves
- Fresh cilantro leaves - 1/2 cup
- Fresh mint leaves - 1/2 cup
- Red bell pepper - 1, thinly sliced
- Cucumber - 1 medium, julienned
- Carrots - 2 medium, julienned
- Firm tofu - 8 ounces, sliced into thin strips
- Rice paper wrappers - 8 sheets
Let's Get Started
- Fill a large bowl with warm water.
- Dip one rice paper wrapper into the water for a few seconds until it becomes soft and pliable.
- Place the softened wrapper on a clean surface.
- In the center of the wrapper, layer a lettuce leaf, tofu strips, carrots, cucumber, bell pepper, mint leaves, and cilantro leaves.
- Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom to form a summer roll.
- Repeat with the remaining ingredients to make more summer rolls.
- Serve the summer rolls with peanut dipping sauce.
