Cazón en Adobo
Cazón en Adobo is a traditional Spanish dish from Andalusia, featuring marinated dogfish deep-fried to perfection.
Ingredients - Serves 4
- Olive oil - For frying
- Flour - For coating
- Salt - 1 teaspoon
- Paprika - 1 teaspoon
- Oregano - 1 teaspoon
- Cumin - 1 teaspoon
- Garlic - 4 cloves, minced
- Water - 200 ml
- White wine vinegar - 200 ml
- Dogfish (cazón) - 1 kg, cut into chunks
Let's Get Started
- In a large bowl, combine the vinegar, water, minced garlic, cumin, oregano, paprika, and salt to create the marinade.
- Add the chunks of dogfish to the marinade, ensuring they are fully covered. Leave to marinate in the fridge for at least 2 hours.
- After marinating, remove the dogfish from the marinade and pat dry. Coat each piece in flour.
- Heat the olive oil in a deep frying pan over medium-high heat.
- Fry the dogfish pieces until golden brown, about 5 minutes on each side.
- Remove the dogfish from the oil and drain on paper towels.
- Serve hot, ideally with a side of fresh lemon wedges and aioli.
