Filetto Di Dentice al Cartoccio
This is a traditional Italian dish where red snapper fillets are baked in a foil packet with a medley of vegetables and herbs.
Ingredients - Serves 4
- Lemon - 1, sliced
- Salt and pepper - To taste
- Fresh basil - 1/4 cup, chopped
- Capers - 2 tablespoons
- Black olives - 1/2 cup, pitted and sliced
- Cherry tomatoes - 1 cup, halved
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Red snapper fillets - 4 (6 ounce)
Let's Get Started
- Preheat the oven to 400°F (200°C).
- Place each snapper fillet on a large piece of aluminum foil.
- Drizzle the fillets with olive oil and sprinkle with minced garlic.
- Top each fillet with cherry tomatoes, olives, capers, and basil. Season with salt and pepper.
- Place a few lemon slices on top of each fillet.
- Fold the foil over the fish and vegetables, sealing the edges to create a packet.
- Place the packets on a baking sheet and bake for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
- Carefully open the packets (watch out for steam) and serve the fish with the vegetables and juices from the packet.
