Fig and Honey Glazed Pork

Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 375°F.
  2. Season the pork tenderloin with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat.
  4. Sear the pork tenderloin on all sides until browned, about 2-3 minutes per side.
  5. Remove the pork from the skillet and set aside.
  6. In the same skillet, add the chopped figs, honey, Dijon mustard, minced garlic, salt, and pepper.
  7. Cook for 2-3 minutes, stirring occasionally, until the figs are softened and the sauce is thickened.
  8. Return the pork tenderloin to the skillet and spoon the fig and honey glaze over the top.
  9. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the pork reaches an internal temperature of 145°F.
  10. Remove from the oven and let the pork rest for 5 minutes before slicing.
  11. Serve the sliced pork with the remaining fig and honey glaze.
