Fig and Honey Glazed Pork
This succulent pork dish is glazed with a sweet and tangy fig and honey sauce.
Ingredients - Serves 4
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Garlic - 2 cloves, minced
- Dijon mustard - 2 tablespoons
- Honey - 1/4 cup
- Dried figs - 1 cup, chopped
- Pork tenderloin - 1 pound
Let's Get Started
- Preheat the oven to 375°F.
- Season the pork tenderloin with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the pork tenderloin on all sides until browned, about 2-3 minutes per side.
- Remove the pork from the skillet and set aside.
- In the same skillet, add the chopped figs, honey, Dijon mustard, minced garlic, salt, and pepper.
- Cook for 2-3 minutes, stirring occasionally, until the figs are softened and the sauce is thickened.
- Return the pork tenderloin to the skillet and spoon the fig and honey glaze over the top.
- Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the pork reaches an internal temperature of 145°F.
- Remove from the oven and let the pork rest for 5 minutes before slicing.
- Serve the sliced pork with the remaining fig and honey glaze.
