Fig and Balsamic Glazed Shrimp
This recipe features succulent shrimp glazed with a sweet and tangy fig and balsamic sauce.
Ingredients - Serves 4
- Olive oil - 2 tablespoons
- Fresh basil - 2 tablespoons, chopped
- Salt and pepper - To taste
- Garlic - 2 cloves, minced
- Honey - 2 tablespoons
- Balsamic vinegar - 1/4 cup
- Fresh figs - 8, halved
- Shrimp - 1 pound, peeled and deveined
Let's Get Started
- In a small bowl, whisk together the balsamic vinegar, honey, minced garlic, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add the shrimp to the skillet and cook for 2-3 minutes on each side, until pink and cooked through.
- Remove the shrimp from the skillet and set aside.
- In the same skillet, add the halved figs and cook for 2-3 minutes, until slightly softened.
- Pour the balsamic mixture over the figs and stir to coat.
- Return the shrimp to the skillet and toss with the figs and balsamic glaze.
- Cook for an additional 1-2 minutes, until the shrimp are heated through and coated with the glaze.
- Remove from heat and sprinkle with fresh chopped basil.
- Serve hot as an appetizer or over a bed of rice or salad as a main course.
