Fig and Almond Cake
This delicious fig and almond cake is moist, flavorful, and perfect for any occasion.
Ingredients - Serves 8
- Powdered sugar - For dusting
- Milk - 1/2 cup
- Vanilla extract - 1 teaspoon
- Eggs - 2
- Granulated sugar - 3/4 cup
- Unsalted butter - 1/2 cup, softened
- Salt - 1/4 teaspoon
- Baking powder - 1 teaspoon
- All-purpose flour - 1 cup
- Almonds - 1 cup, finely ground
- Dried figs - 1 cup, chopped
Let's Get Started
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a bowl, combine the chopped figs, ground almonds, all-purpose flour, baking powder, and salt. Set aside.
- In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- Gradually add the dry ingredient mixture to the wet ingredients, alternating with the milk. Mix until just combined.
