Let's Get Started

  1. Heat the olive oil in a large paella pan or skillet over medium heat.
  2. Add the fideo noodles and cook until golden brown, stirring frequently.
  3. Add the garlic, onion, and bell pepper and cook until softened.
  4. Add the tomatoes and cook until they break down and form a sauce.
  5. Pour in the fish stock and add the saffron threads. Bring to a boil.
  6. Add the mixed seafood, season with salt and pepper, and stir well.
  7. Reduce the heat to low and simmer until the noodles are tender and the seafood is cooked through, about 10-15 minutes.
  8. Serve the fideua hot, garnished with lemon wedges.
