Fideua
Fideuà is a traditional Spanish dish similar to paella, but made with short, thin noodles instead of rice.
Ingredients - Serves 6
- Lemon wedges - For serving
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Mixed seafood (shrimp, mussels, calamari, etc.) - 500g
- Fish or seafood stock - 4 cups
- Saffron threads - 1 pinch
- Paprika - 1 teaspoon
- Tomato - 2, diced
- Red bell pepper - 1, diced
- Garlic - 3 cloves, minced
- Onion - 1, finely chopped
- Fideos (short, thin noodles) - 250g
- Olive oil - 3 tablespoons
Let's Get Started
- Heat the olive oil in a large paella pan or wide skillet over medium heat.
- Add the fideos and cook until golden brown, stirring frequently, about 5 minutes.
- Push the fideos to one side of the pan and add the chopped onion, minced garlic, diced red bell pepper, and diced tomato to the other side. Cook until the vegetables are softened, about 5 minutes.
- Mix the vegetables with the fideos and add the paprika and saffron threads. Stir well to combine.
- Pour in the fish or seafood stock and bring to a simmer. Cook for 10 minutes, stirring occasionally.
- Add the mixed seafood to the pan and season with salt and pepper. Cook for another 10-15 minutes, or until the seafood is cooked through and the noodles are tender.
- Remove from heat and let the fideuà rest for a few minutes.
- Garnish with fresh parsley and serve with lemon wedges.
