Feijão Tropeiro
Feijão Tropeiro is a traditional Brazilian dish from the region of Minas Gerais. It is a hearty and flavorful dish made with beans, sausage, bacon, eggs, and manioc flour.
Ingredients - Serves 6
- Salt and pepper - To taste
- Collard greens - 1 bunch, chopped
- Manioc flour - 1 cup
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Eggs - 4
- Sausage - 200 grams, diced
- Bacon - 200 grams, diced
- Pinto beans - 2 cups, cooked
Let's Get Started
- In a large pan, fry the bacon until crispy. Remove and set aside.
- In the same pan, fry the sausage until browned. Remove and set aside.
- In the same pan, scramble the eggs. Remove and set aside.
- In the same pan, sauté the onion and garlic until soft.
- Add the cooked beans to the pan and mix well.
- Gradually add the manioc flour, stirring constantly until well combined.
- Add the bacon, sausage, and scrambled eggs back into the pan. Mix well.
- Add the chopped collard greens and cook until wilted.
- Season with salt and pepper to taste.
- Serve hot.
