Feijoada À Transmontana
Feijoada à Transmontana is a traditional Portuguese dish from the region of Trás-os-Montes. It's a hearty bean stew with various types of pork meat and sausages.
Ingredients - Serves 6
- Salt and pepper - To taste
- Carrots - 2, sliced
- Bay leaves - 2
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Farinheira sausage - 1
- Chouriço sausage - 1, sliced
- Smoked pork ribs - 500 grams
- Pork ear and snout - 250 grams
- Pork belly - 500 grams, cut into chunks
- Dried red kidney beans - 500 grams
Let's Get Started
- Soak the beans overnight in cold water.
- In a large pot, add the beans and the pork belly, ear, snout, and ribs. Cover with water and bring to a boil. Reduce the heat and simmer for about 2 hours.
- In a frying pan, heat the olive oil and sauté the onion and garlic until golden.
- Add the sautéed onion and garlic, chouriço, farinheira, bay leaves, carrots, salt, and pepper to the pot. Cook for another 30 minutes.
- Adjust the seasoning if necessary and serve hot.
