  1. Soak the beans overnight in cold water.
  2. In a large pot, add the beans and the pork belly, ear, snout, and ribs. Cover with water and bring to a boil. Reduce the heat and simmer for about 2 hours.
  3. In a frying pan, heat the olive oil and sauté the onion and garlic until golden.
  4. Add the sautéed onion and garlic, chouriço, farinheira, bay leaves, carrots, salt, and pepper to the pot. Cook for another 30 minutes.
  5. Adjust the seasoning if necessary and serve hot.
