Fava Bean and Tuna Bruschetta
This delicious bruschetta is made with fresh fava beans, tuna, and a flavorful herb dressing.
Ingredients - Serves 4
- Salt and pepper - To taste
- Fresh mint - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Baguette - 1, sliced
- Tuna - 1 can, drained
- Fava beans - 1 cup, shelled
Let's Get Started
- Bring a pot of water to a boil and blanch the fava beans for 2 minutes. Drain and rinse with cold water.
- Remove the outer skin from the fava beans.
- In a bowl, combine the fava beans, tuna, minced garlic, lemon juice, chopped parsley, chopped mint, salt, and pepper. Mix well.
- Preheat the oven to 350°F.
- Brush the baguette slices with olive oil and place them on a baking sheet.
- Bake for 5-7 minutes, or until the bread is toasted and crispy.
- Remove the bread from the oven and let it cool slightly.
