Fava Bean and Roasted Onion Salad
This refreshing salad features tender fava beans and caramelized roasted onions, tossed in a tangy vinaigrette.
Ingredients - Serves 4
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Honey - 1 teaspoon
- Dijon mustard - 1 teaspoon
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Red onion - 1 large, sliced
- Fava beans - 2 cups, shelled
Let's Get Started
- Preheat the oven to 400°F.
- Place the sliced red onion on a baking sheet and drizzle with 1 tablespoon of olive oil. Season with salt and pepper.
- Roast the onions in the oven for 20-25 minutes, or until caramelized and golden brown. Set aside to cool.
- Bring a pot of salted water to a boil. Add the shelled fava beans and cook for 3-4 minutes, until tender. Drain and rinse with cold water.
