Fava Bean and Pesto Bruschetta

Ingredients - Serves 4

Let's Get Started

  1. Bring a pot of salted water to a boil. Add the fava beans and cook for 2-3 minutes. Drain and rinse with cold water.
  2. Remove the outer skins from the fava beans.
  3. In a food processor, combine the fava beans, minced garlic, lemon juice, olive oil, salt, and pepper. Pulse until smooth.
  4. In a separate bowl, combine the fresh basil leaves, pine nuts, and grated Parmesan cheese. Use a mortar and pestle or a food processor to crush and mix the ingredients into a pesto.
  5. Toast the sliced crusty bread in a toaster or under the broiler until golden brown.
  6. Spread the fava bean mixture onto the toasted bread slices.
  7. Top each bruschetta with a spoonful of the pesto.
  8. Serve immediately and enjoy!
