Fava Bean and Pesto Bruschetta
This delicious bruschetta is made with fresh fava beans, homemade pesto, and crusty bread.
Ingredients - Serves 4
- Crusty bread - 1 loaf, sliced
- Parmesan cheese - 1/4 cup, grated
- Pine nuts - 1/4 cup
- Fresh basil leaves - 1 cup
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Fava beans - 2 cups, shelled
Let's Get Started
- Bring a pot of salted water to a boil. Add the fava beans and cook for 2-3 minutes. Drain and rinse with cold water.
- Remove the outer skins from the fava beans.
- In a food processor, combine the fava beans, minced garlic, lemon juice, olive oil, salt, and pepper. Pulse until smooth.
- In a separate bowl, combine the fresh basil leaves, pine nuts, and grated Parmesan cheese. Use a mortar and pestle or a food processor to crush and mix the ingredients into a pesto.
- Toast the sliced crusty bread in a toaster or under the broiler until golden brown.
- Spread the fava bean mixture onto the toasted bread slices.
- Top each bruschetta with a spoonful of the pesto.
- Serve immediately and enjoy!
