Fava Bean and Arugula Salad
This refreshing salad combines fava beans, arugula, cherry tomatoes, and a tangy lemon vinaigrette.
Ingredients - Serves 4
- Salt and pepper - To taste
- Honey - 1 teaspoon
- Dijon mustard - 1 teaspoon
- Extra virgin olive oil - 2 tablespoons
- Lemon - 1, juiced
- Red onion - 1/4 cup, thinly sliced
- Cherry tomatoes - 1 cup, halved
- Arugula - 4 cups
- Fava beans - 2 cups, shelled
Let's Get Started
- Bring a pot of salted water to a boil. Add the fava beans and cook for 2 minutes. Drain and transfer to a bowl of ice water to cool. Peel off the outer skins of the fava beans.
- In a large salad bowl, combine the arugula, cherry tomatoes, red onion, and peeled fava beans.
