Fasolada
Fasolada is a traditional Greek soup, primarily made from white beans, olive oil, and vegetables. It's a hearty and healthy dish that's perfect for cold weather.
Ingredients - Serves 6
- Salt and pepper - To taste
- Bay leaves - 2
- Tomato - 1 large, chopped
- Celery - 2 stalks, chopped
- Carrot - 1 large, chopped
- Garlic - 2 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 1/4 cup
- White beans - 500 grams
Let's Get Started
- Soak the beans in water overnight.
- Drain the beans and place them in a large pot. Add enough water to cover the beans by 2 inches.
- Bring the water to a boil, then reduce the heat and simmer for about 1 hour, or until the beans are tender.
- In a separate pan, heat the olive oil over medium heat. Add the onion, garlic, carrot, and celery, and cook until the vegetables are soft.
- Add the chopped tomato to the pan and cook for a few more minutes.
- Add the vegetable mixture to the pot with the beans. Add the bay leaves, salt, and pepper.
- Simmer the soup for another hour, or until the flavors are well combined.
- Serve the soup hot, with a drizzle of olive oil on top if desired.
