  2. Add the country potatoes and cook until golden brown and crispy, about 10 minutes.
  3. Add the onion, bell pepper, and garlic to the skillet and cook until the vegetables are soft, about 5 minutes.
  4. Add the cooked breakfast meat to the skillet and stir to combine.
  5. Make four wells in the potato mixture and crack an egg into each well.
