  1. Soak the cod in cold water for 24 hours, changing the water several times.
  2. Boil the cassava until soft, then mash with the butter and cream. Season with salt and pepper.
  3. In a pan, heat the olive oil and sauté the onion and garlic until soft.
  4. Add the cod to the pan and cook until it flakes easily.
  5. In a baking dish, layer half the mashed cassava, the cod, and then the remaining cassava.
  6. Top with the grated cheese and bake at 180°C (350°F) for 30 minutes, or until golden and bubbly.
