Escamoles
Escamoles, also known as 'Mexican Caviar', is a traditional Mexican dish made from the edible larvae and pupae of ants. They are usually pan-fried with butter and spices, and served with guacamole and tortillas.

- Black pepper - To taste
- Salt - To taste
- Epazote - 1 tablespoon, chopped
- Serrano chilies - 2, finely chopped
- Garlic - 2 cloves, minced
- Escamoles - 500 grams
- Butter - 2 tablespoons
Let's Get Started
- Melt the butter in a pan over medium heat.
- Add the escamoles to the pan and sauté for about 5 minutes, until they start to become crispy.
- Add the minced garlic, chopped chilies, and epazote to the pan. Continue to sauté for another 5 minutes.
- Season with salt and black pepper to taste.
- Serve the escamoles with guacamole and warm tortillas.
