Erwtensoep
Erwtensoep, also known as Dutch split pea soup, is a thick, hearty meal full of green split peas, pork, and plenty of vegetables.
Ingredients - Serves 6
- Salt and pepper - To taste
- Bay leaf - 1
- Garlic - 2 cloves, minced
- Onion - 1, diced
- Potato - 1, diced
- Celery - 2 stalks, diced
- Carrots - 2, diced
- Leek - 1, sliced
- Pork shoulder - 1 pound, cubed
- Water - 8 cups
- Green split peas - 2 cups
Let's Get Started
- Rinse the split peas under cold water until the water runs clear.
- In a large pot, combine the split peas, water, and pork. Bring to a boil, then reduce the heat to low and simmer for 45 minutes.
- Add the leek, carrots, celery, potato, onion, garlic, bay leaf, salt, and pepper to the pot. Continue to simmer for another 45 minutes, or until the vegetables are tender and the soup is thick.
- Remove the bay leaf before serving. The soup can be served as is, or pureed for a smoother texture.
