  1. Heat the olive oil in a large pot over medium heat.
  2. Add the lamb and brown on all sides. Remove the lamb and set aside.
  3. In the same pot, add the onions and garlic and cook until soft.
  4. Return the lamb to the pot and add the white wine, paprika, bay leaves, salt, and pepper. Cover and simmer for 1 hour.
  5. Add the potatoes and carrots to the pot and continue to simmer for another hour, or until the lamb is tender and the vegetables are cooked.
  6. Adjust the seasoning if necessary and serve hot.
