Enfrijoladas

Ingredients - Serves 4
- Salt and pepper - To taste
- Cilantro - 1/4 cup, chopped
- Crema - 1/2 cup
- Avocado - 1, sliced
- Queso fresco - 1 cup, crumbled
- Corn tortillas - 8
- Chicken broth - 1 cup
- Onion - 1/2, chopped
- Garlic - 2 cloves, minced
- Black beans - 2 cups, cooked
Let's Get Started
- In a blender, combine the cooked black beans, garlic, onion, and chicken broth. Blend until smooth.
- Heat a large skillet over medium heat. Pour in the bean mixture and bring to a simmer. Cook for 10 minutes, stirring occasionally.
- In a separate skillet, heat a small amount of oil over medium heat. One at a time, dip the tortillas in the bean sauce, then fry in the skillet for about 30 seconds on each side.
- Fill each tortilla with a sprinkle of queso fresco, then fold in half.
- Serve the enfrijoladas topped with avocado slices, a drizzle of crema, a sprinkle of cilantro, and additional queso fresco. Season with salt and pepper to taste.
