Ingredients - Serves 4
- Vegetable oil - 2 tablespoons
- Salt and pepper - To taste
- Cilantro - 1/4 cup, chopped
- Sour cream - 1/2 cup
- Cheese - 1 cup, shredded
- Tortillas - 8
- Green salsa - 2 cups
- Chicken breasts - 2, cooked and shredded
Let's Get Started
- Preheat the oven to 350°F.
- In a skillet, heat the vegetable oil over medium heat.
- Add the green salsa and cook for 5 minutes.
- In a separate bowl, mix the shredded chicken with half of the green salsa.
- Warm the tortillas in the microwave or on a skillet.
- Place a spoonful of the chicken mixture onto each tortilla and roll it up.
- Place the rolled tortillas in a baking dish.
- Pour the remaining green salsa over the enchiladas.
- Sprinkle the shredded cheese on top.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
- Garnish with sour cream and chopped cilantro before serving.
