Let's Get Started

  1. Preheat the oven to 350°F.
  2. In a skillet, heat the vegetable oil over medium heat.
  3. Add the green salsa and cook for 5 minutes.
  4. In a separate bowl, mix the shredded chicken with half of the green salsa.
  5. Warm the tortillas in the microwave or on a skillet.
  6. Place a spoonful of the chicken mixture onto each tortilla and roll it up.
  7. Place the rolled tortillas in a baking dish.
  8. Pour the remaining green salsa over the enchiladas.
  9. Sprinkle the shredded cheese on top.
  10. Bake for 20 minutes, or until the cheese is melted and bubbly.
  11. Garnish with sour cream and chopped cilantro before serving.
