Enchiladas Suizas
Enchiladas Suizas are a delicious Mexican dish made with tortillas filled with chicken, topped with a creamy green sauce, and melted cheese.
Ingredients - Serves 4
- Cheese - 1 cup, shredded (such as Monterey Jack or Cheddar)
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1/4 cup, chopped
- Cilantro - 1/4 cup, chopped
- Sour cream - 1/2 cup
- Green salsa - 1 cup
- Tortillas - 8, corn or flour
- Chicken breasts - 2, cooked and shredded
Let's Get Started
- Preheat the oven to 350°F.
- In a skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the shredded chicken to the skillet and season with salt and pepper. Cook for a few minutes until heated through.
- In a separate bowl, mix the green salsa and sour cream together.
- Spread a spoonful of the salsa mixture onto each tortilla. Add a spoonful of the chicken mixture and roll up the tortilla.
- Place the rolled enchiladas in a baking dish. Pour the remaining salsa mixture over the top.
- Sprinkle the shredded cheese over the enchiladas.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped cilantro before serving.
