Elderflower Cordial
A refreshing, sweet, and aromatic drink made from the blossoms of the elderflower tree.
Ingredients - Serves 10
- Water - 1.5 liters
- Citric acid - 50 g
- Lemons - 2, sliced
- Sugar - 1.5 kg
- Elderflowers - 20 heads
Let's Get Started
- Shake the elderflowers to remove any insects, and then place in a large bowl.
- Add the sliced lemons and citric acid.
- In a large pot, dissolve the sugar in water, bringing it to a boil and stirring continuously.
- Pour the hot sugar water over the elderflowers, lemons, and citric acid.
- Cover the bowl with a cloth and leave to infuse for 24 hours.
- After 24 hours, strain the mixture through a muslin cloth and pour into sterilized glass bottles.
- The cordial is ready to use immediately, but it will keep in the refrigerator for up to 6 weeks.
- To serve, dilute the elderflower cordial with still or sparkling water to taste.
