Elderflower Cordial

Ingredients - Serves 10

Let's Get Started

  1. Shake the elderflowers to remove any insects, and then place in a large bowl.
  2. Add the sliced lemons and citric acid.
  3. In a large pot, dissolve the sugar in water, bringing it to a boil and stirring continuously.
  4. Pour the hot sugar water over the elderflowers, lemons, and citric acid.
  5. Cover the bowl with a cloth and leave to infuse for 24 hours.
  6. After 24 hours, strain the mixture through a muslin cloth and pour into sterilized glass bottles.
  7. The cordial is ready to use immediately, but it will keep in the refrigerator for up to 6 weeks.
  8. To serve, dilute the elderflower cordial with still or sparkling water to taste.
