Eierpfannkuchen
Eierpfannkuchen, or German Pancakes, are a delicious and fluffy breakfast dish. They are similar to American pancakes but are thinner and larger in diameter.
Ingredients - Serves 4
- Lemon wedges - For serving
- Powdered sugar - For dusting
- Unsalted butter - 2 tablespoons
- Salt - 1/2 teaspoon
- All-purpose flour - 1 cup
- Milk - 1 cup
- Eggs - 4
Let's Get Started
- In a large bowl, whisk together the eggs, milk, flour, and salt until smooth.
- Heat a large non-stick skillet over medium heat. Add a small amount of butter and swirl to coat the bottom of the skillet.
- Pour a ladleful of the batter into the skillet, tilting the skillet to spread the batter evenly.
- Cook until the bottom is lightly browned, about 2 minutes. Flip the pancake and cook until the other side is lightly browned, about 1 minute more.
- Transfer the pancake to a plate and keep warm. Repeat with the remaining batter, adding more butter to the skillet as needed.
- Dust the pancakes with powdered sugar and serve with lemon wedges.
