Eggs and Tomato
A simple and delicious dish made with eggs and fresh tomatoes.
Ingredients - Serves 2
- Fresh basil - 2 tablespoons, chopped
- Black pepper - To taste
- Salt - To taste
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Tomatoes - 2 medium, diced
- Eggs - 4
Let's Get Started
- Heat olive oil in a skillet over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant.
- Add diced tomatoes and cook for 3-4 minutes until softened.
- Create small wells in the tomato mixture and crack the eggs into each well.
- Cover the skillet and cook for 4-5 minutes until the eggs are cooked to your desired doneness.
- Season with salt and black pepper to taste.
