Edamame Stuffed Sweet Potatoes
A healthy and delicious dish of baked sweet potatoes stuffed with a flavorful edamame mixture.
Ingredients - Serves 4
- Salt and pepper - To taste
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Edamame - 2 cups, shelled and cooked
- Sweet potatoes - 4 medium
Let's Get Started
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Pierce the sweet potatoes with a fork and place them on the baking sheet. Bake for 45 minutes, or until tender.
- While the sweet potatoes are baking, heat the olive oil in a skillet over medium heat.
- Add the garlic and onion and cook until softened, about 5 minutes.
- Add the edamame, soy sauce, and sesame oil. Cook for another 5 minutes, stirring frequently.
- Remove the sweet potatoes from the oven and let them cool slightly. Then, cut a slit in the top of each one and scoop out some of the flesh to make room for the edamame mixture.
- Stuff the sweet potatoes with the edamame mixture, then return them to the oven for another 5 minutes to heat through.
- Season with salt and pepper before serving.
