Edamame Stuffed Sweet Potatoes

Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Pierce the sweet potatoes with a fork and place them on the baking sheet. Bake for 45 minutes, or until tender.
  3. While the sweet potatoes are baking, heat the olive oil in a skillet over medium heat.
  4. Add the garlic and onion and cook until softened, about 5 minutes.
  5. Add the edamame, soy sauce, and sesame oil. Cook for another 5 minutes, stirring frequently.
  6. Remove the sweet potatoes from the oven and let them cool slightly. Then, cut a slit in the top of each one and scoop out some of the flesh to make room for the edamame mixture.
  7. Stuff the sweet potatoes with the edamame mixture, then return them to the oven for another 5 minutes to heat through.
  8. Season with salt and pepper before serving.
