Edamame Kebabs
These delicious and healthy edamame kebabs are perfect for a summer barbecue or a light dinner.
Ingredients - Serves 4
- Salt and pepper - To taste
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Olive oil - 2 tablespoons
- Red onion - 1, cut into 1-inch pieces
- Zucchini - 1, cut into 1-inch pieces
- Yellow bell pepper - 1, cut into 1-inch pieces
- Red bell pepper - 1, cut into 1-inch pieces
- Edamame - 2 cups, shelled and cooked
Let's Get Started
- Preheat your grill to medium-high heat.
- Thread the edamame, bell peppers, zucchini, and onion onto skewers.
- In a small bowl, whisk together the olive oil, soy sauce, garlic, salt, and pepper.
- Brush the kebabs with the olive oil mixture.
